Ingredients

2 CANS WHOLE TOMATOES IN PUREE

SALT/PEPPER/BASIL

2 GARLIC CLOVES, THINLY SLICED

1 ONION CHOPPED FINE

2 HANDFULLS OF PROSCIUTTO (ABOUT 1/8 LB)

1 CUP VODKA

1 CAN TOMATO PASTE

2 PINTS OF HEAVY CREAM (OR LIGHT) (USE PREFERABLY 1 1/2)

1 CUP PARMESEAN CHEESE

Directions

BREAK UP TOMATOES IN SAUCEPAN ADD SALT, PEPPER AND BASIL SIMMER FOR 2 HOURS

IN ANOTHER SAUCEPAN WITH A LITTLE OIL, SAUTE ONION AND Garlic

ADD PROSCIUTTO AND SAUTE FOR 2 MINUTE

POUR IN VODKA AND BURN OFF ON A HIGH FLAME FOR ABOUT 5

MINUTES (MOST OF THE LIQUID SHOULD BE BURNED OFF)

ADD TOMATO PASTE AND BLEND WELL

ADD TO THE RED SAUCE & BLEND

POUR IN CREAM

ADD PARMESEAN CHEESE
